I have been doing 15 minutes of weight training a day (mostly using hand weights) and then I try to do 2-3 days of aerobic/walking. I only work 1 muscle group a week. So on Monday I might do biceps and triceps, Tuesday squats and ham curls, etc. It has really helped me for the time crunch life brings.
Stairs are an excellent aerobic activity. Weight training does well for bumping up the metabolism. Maybe you could take some hand weights with you to work to do on your breaks.
