This is on of my very favorite dishes, and it is very simple to prepare.

1/2 cup lemon juice (or juice and zest from 1 lemon)
1/4 cup vegetable oil
1/4 cup parsley (fresh preferred)
1 teaspoon dried tarragon
1/4 teaspoon pepper
8 boneless skinless chicken breasts (2 lbs)

In a large resealable plastic bag, combine the first five ingredients. Add chicken. Seal and refrigerate for 4 hours or overnight. Drain and discard marinade.

Grill chicken, uncovered, over medium low heat for 10-15 minutes or until juices run clear. Yield: 8 servings.

Diabetic exchanges: 3 1/2 lean meat, 1 fat

Calories: 188
Sodium: 78 mg
Cholesterol: 66 mg
Carbohydrate: 1 g
Protein: 26 g
Fat: 8 g
Fiber: trace

I've got my chicken marinating right now- that fresh parsley smells wonderful! I've never used fresh before, can't wait to try it!
