I wanted to share this healthy refreshing salad recipe.
Garbanzo Beans Salad (you can use red beans or any other kind too)
2 1/2 cups cooked garbanzo beans (high in protein and fiber)
3 large stalks celery
Sliced1 small onion or green onion
Diced1/2 cup black olives
2 cups cherry tomatoes, halved ( or regular tomatoes)
3 tablespoons extra virgin olive oil
5 tablespoons of balsamic vinegar or white vinegar
1/2 teaspoon dry mustard
1 clove garlic, minced
1 pinch paprika
Combine beans, celery, onion, and olives in a large bowl and mix and toss well.
I suggest to add the tomato last -- when serving.
Cover and preferably refrigerate at least 4 hours to allow flavors to mix. Add salt and pepper to taste. This is a good recipe to cleanse the body. Let me know if you try it. ummmmmmmmmmm tastes so good!
